Looking for an interesting way to enjoy your Christmas Pudding? If you’ve got a lot leftover from the big day, why not try our Christmas Pudding Crumble recipe? But if you just want a simple dessert with that Christmas Pudding flavour, we suggest this ice cream! All you need to do is simply blend some vanilla ice cream in a food blender, crumble some pudding into the mixture and then freeze for a couple of hours. We also suggest adding a caramel sauce or Amaretto topping!
However if you feel like making your ice cream from scratch, try this recipe:
You will need:
- 4 large egg yolks
- 100g of caster sugar
- 175g of leftover Christmas Pudding
- 2-3 tbsp of brandy or your favourite flavoured liqueur
- 300ml of double cream
Whisk the egg yolks and sugar with an electric whisk for 10 mins until pale and thick.
Crumble up the Christmas Pudding and stir into the egg mixture so it is all evenly coated.
Pour in the brandy or liqueur and stir again.
In a separate bowl whip the cream into soft peaks and fold in the pudding mixture. Pour into a container that is suitable for freezing, cover, then freeze for several hours. Stir the ice cream occasionally.
