We’ve all been in this situation before. Everyone fills up on Christmas dinner so loads of the delicious pudding is left over! Well, now there’s no need to worry as we came across a great recipe that will use up any Christmas Pudding that you and your guests don’t eat on the big day. Love Food came up with a Christmas Pudding Crumble, and it sounds delicious!
You will need:
120g of butter
270g of plain flour
350g of Christmas Pudding
450g Bramley apples, cut into 1cm cubes
1 tbsp caster sugar
1 tsp cinnamon
Preheat oven to 180’C (Gas mark 4).
Puree the Christmas Pudding in a food blender – this is important as if you just crumble it the pudding may burn.
Cube the butter and add to the flour, then add the Christmas Pudding. Rub the butter and pudding into the flour to create a light breadcrumb texture.
Place the apples into a bowl and mix in the sugar and cinnamon. Heat on high in a microwave for approximately 3 minutes or until the apple begins to soften slightly.
Transfer apples into an oven-proof dish and top with crumble, then bake for 20-30 minutes!
This is a great recipe if you’ve got some pudding left over, and it’s great to have as a dessert after Christmas!
